3-4 small boneless skinless chicken breasts (about 1 1/2 lbs/750g) or 2 large chicken breasts, split lengthwise

2 bell peppers 1 red and 1 green, seeded and cut into strips

1 medium onion minced

1 teaspoon ground cumin

1 1/2 teaspoon chilli powder

1 teaspoon garlic powder or minced garlic

2 teaspoons of paprika

Salt and freshly ground black pepper to taste

1 tablespoon vegetable oil

1 cup grated mozzarella cheese or your favorite cheese

Chopped fresh cilantro or parsley for garnish
