Ingredients :
- Β°156 grams of all-purpose flour
- Β°1 teaspoon of salt
- Β°2 teaspoon of processed cocoa powder
- Β°312 g dark chocolate, coarsely chopped
- Β°226g unsalted butter, cut into 1 inch pieces
- Β°1 teaspoon of instant espresso powder
- Β°300 grams of caster sugar
- Β°100g packed light brown sugar
- Β°5 eggs at room temperature
- Β°2 teaspoons of vanilla
directions:
Preheat the oven to 175Β°C (350Β°F).
Butter the sides and bottom of a 23cm x 33cm baking dish with butter. Cover the tray with parchment paper.
In a bowl, whisk the flour, salt and cocoa powder.
Place the chocolate, butter and instant espresso powder in a large bowl and place over a saucepan of simmering water, stirring occasionally, until the chocolate and butter are completely melted.
Turn off the heat and leave the pan over the water and add the sugars. Whisk to combine well and remove the bowl from the pan. The mixture should be at room temperature.
Add 3 eggs to chocolate mixture and beat until combined. Add the remaining eggs and beat until combined.
