2 cups graham crackers, crushed

2 tablespoons butter, melted

16 ounces cream cheese, softened

½ cup coconut, grated

1 cup coconut cream

1 teaspoon of rum extract

1 can crushed pineapple

½ cup maraschino cherries, chopped

½ cup pecans, chopped

8 ounces whipped topping, thawed


Preheat the oven to 350*

Spread the coconut evenly on a baking sheet and toast for 5 minutes, until golden brown
