technique is everything when it comes to veggies. good thing that Brussels sprouts have made a comeback.
Ingredients:
- 15 Brussels sprouts, halved lengthwise
- 11⁄2 teaspoons of butter
- 11⁄2 teaspoons of olive oil
- 3 cloves of garlic, shattered with a flat knife
Parmesan cheese, freshly grated - Salt, to taste
- Pepper, to taste
Instructions:
- Melt the butter and olive oil in a medium saucepan until the butter is foamy.
- Reduce heat to medium, add crushed garlic and simmer until lightly browned.
- Remove the garlic and discard it.
- Attach the sliced side sprouts, cover and cook without stirring to medium-low heat until tender. pierce it with a knife to check.
- The cut side of the sprouts should be nice and brown, with a nutty, buttery taste filled with garlic.
Tips and tricks:
- To remove some of the bitterness that brussel sprouts are well known for. Use a bit of fat when cooking.
